Off the beaten path in Cos Cob off River Road and behind the old Fjord Fisheries Market is Sandy’s Farm Stand.  Sandy offers only the freshest Connecticut grown produce as well as some good fresh picks from other areas.  Sandy brings fresh fruits and vegetables from the Enfield, Hartford area to a convenient Greenwich farm stand. We are lucky that she has been opening her stand for the past 14 Summers.  She is open everyday, rain or shine from 9:00am to 6:30pm.  Be sure to stop by and pay her a visit. You will feel great knowing you are supporting local farms and at the same time eating healthy. Sandy is currently selling tomatoes, squash, green onions, cucumbers, corn, blueberries, peaches, nectarines and more. Yesterday, we bought fresh tomatoes, cucumbers and green onions.  Here is a quick and easy summer salad recipe we tested from allrecipessandysfarmstand3.com – It was DELICIOUS paired with a chilled Sauvignon Blanc. Enjoy!

INGREDIENTS

* 2 medium tomatoes, sliced and quartered
* 1 large cucumber, peeled and sliced
* 4 green onions, chopped
* 1 tablespoon sugar
* 1 teaspoon salt
* 1/4 teaspoon pepper
* 1/3 cup cider vinegar
* 1 cup water

DIRECTIONS

In a bowl, combine the tomatoes, cucumber and onions. In a small bowl, combine the sugar, salt and pepper. Whisk in the vinegar and water. Pour over vegetables and toss to coat. Cover and refrigerate for 4 hours or overnight.
